Ingredients:

  • 1 tbsp olive or avocado oil

  • 4 pre-cooked chicken sausage breakfast links, sliced into coins (I used these from my Costco haul)

  • 3 cups fresh spinach

  • 3/4 tsp sea salt, divided

  • 1/2 tsp black pepper, divided

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 8 eggs

  • 1/3 cup oat flour (make raw oats in food processor or buy)

  • 1/2 tsp baking powder

  • 1 cup shredded feta chopped

Directions

  1. Heat a large pan over medium heat with the oil. Once hot, add the chicken sausage and the fresh spinach. Season with 1/2 tsp sea salt, 1/4 tsp black pepper, plus the onion powder and garlic powder. Cook, stirring occasionally, until spinach is wilted and chicken sausage is slightly crisped, about 5-7 minutes. Remove from heat and set aside to cool.

  2. Preheat oven to 350°F and line an 8×8″ baking dish with parchment paper.

  3. In a large bowl, whisk the eggs. Stir in 1/2 tsp sea salt, 1/4 tsp pepper, the oat flour, the baking powder, and 1/2 cup of the cheese. Fold in sausage mixture.

  4. Pour the mixture into your lined baking dish. Sprinkle the remaining cheese on top. Bake for 27-30 minutes, until center is set. Allow to slightly cool before slicing- leftovers can be stored in the refrigerator for up to 5 days.
